Beetroot, Coconut, Pear, Curry…

What is bubbling so dangerously on the stove is the result of an experiment that I didn’t think would work. How did it come about?

You wouldn’t believe the ideas you can come up with when it comes to managing leftovers. In the fridge you will find.

  • 1 small cooked beet (unsalted)
  • 1/2 small can of coconut milk
  • 1 bottle of pear juice

hmm this could be a cocktail, couldn’t it? In good memory of the apple-beetroot-juice not so unlikely. So quickly chopped up the beet, added the coconut milk and about the same amount of pear juice. Wand in and…. a red and white, crumbly mush looks at me lurkingly. The solids in the coconut milk can’t be shredded like this, and the beet didn’t turn out as liquid as it should have.

So no cocktail. The brew escapes the spout, because the basic taste is quite ok. So heat it up. But then it would be more like soup? So add a little vegetable broth, salt, and a little yellow Thai curry, which is also still in the fridge waiting for its redemption.

When it comes to the boil, the white crumbs disappear and turn into a light foam. I resist the temptation to call the creation “curry capuccino of beetroot” and slurp the coffee pot full of the pink creamy liquid with pleasure. Experiment successful ;) In time this will become a real soup…
