Fennel and Feta Cheese Puff Pastry

I am back from Luxembourg. And after the long drive I do not feel like much cooking.

A pack of organic puff pastry is still frozen, you can quickly make something out of it. I cut one fennel bulb into fine slices, one onion and two garlic cloves into small cubes. I saute everything together with two good tablespoons of ground elder nettle pesto. Then I add 200 g feta cheese in cubes and let it melt a little. Then I add 10-12 pitted kalamata olives.

In the meantime, the pastry sheets are thawed. I spread the vegetable-cheese mixture on the 6 sheets and fold them over corner. An egg yolk has to be added to coat them, then the packets go into the oven at 200° for 20 minutes until they are brown and plusterig. Serve with a few lettuce leaves and a little vinaigrette.

By the way, 4 pieces are enough for 2 people, 2 are reserve for tomorrow.
