Pineapple with Mint Sugar

While browsing through old cookbooks, I stumble across this “recipe” from Jamie Oliver. It goes very quickly - clean the pineapple and cut into thin strips. Crush a few leaves of mint in a mortar with about 2 tablespoons of sugar until green. Spread through a coarse sieve over the pineapples. Very aromatic!
