Smelt with Potato and Beetroot Salad
The trusted fishmonger has smelt and convinces me that I don’t need a deep fryer to process this small fish. I’m working in the kitchen today anyway, so the evening meal can be small.
I take 3 of the small fish with me and prepare them as follows:
- 2 potatoes
- 1 beet
- 1 egg
boil each and cut into cubes. With
- 1 small red onion, shaved into thin slices
- 3 tablespoons arugula sprouts
- 5 tablespoons vinaigrette of apple cider vinegar and olive oil 2:3 and pepper/salt
mix, allow to infuse and season to taste. I lightly flour the fish and fry it in butter for 2-3 minutes on each side. The light dinner is ready!
